Beware of the video, it's misleading!
2021-12-19. Let's face it, the actual cooking of food is pretty easy. What's difficult and time consuming is all the prep work. That's why having the proper tools will make your task much easier, and totally worth it! This is why the tool industry is so lucrative. Ask any mechanic, whether they fix cars, boats, bicycles, or appliances, there's a different tool for practically every task to be done. The culinary world is no exception to this and food preparation has it's tools to make life easier. Starting home cooks usually don't have the knife skills to be efficient, and a good set of kitchen shears can save both time and effort for something we do several times a day. But just like a mechanics tools, even something like kitchen shears can come specialized and have one for every type of job. Before you go making that investment, there are three things I think you need to consider: Purpose. Know what you want to accomplish. Are you looking for a pair of shears for a specific task? Or are you looking for something more versatile that can cover a range of tasks? Design. Probably the most important of your considerations, this covers everything from size, shape, materials, quality, features, durability, craftmanship, etc. Maintenance. Nobody wants something that's high maintenance, especially for something that will be used frequently, but you also want something that is maintainable. For example, can the blades be sharpened if they get dull? Are the blades adjustable to ensure blade to blade contact? Over the past summer, we started an herb and vegetable garden, and needed a good pair of herb snips to ensure clean cuts without bruising leaves. This was to be a dedicated pair that would serve no other purpose. I had narrowed my essential needs down to three things: 1) adjustable blades to ensure blade to blade contact. 2) stay sharp blades. 3) quality blade for durability. These herb snips by Mercer seemed to have checked all my boxes, so decided to give them a try. While it may not be the same quality as those you will find in high end professional kitchens, I didn't need to them to be. These snips have an adjustable blade via a nut that you can tighten. The handle can accommodate both left and right handed people, and the micro serrated edges usually will keep shears sharper longer. The blades are made with High Carbon Japanese Stainless Steel, but I'm not sure what the significance of mentioning Japan is without divulging the process they used to forge the steel. Iron based metals like steel are subject to oxidation, so just exposure to air will corrode the metal over time. Adding carbon to steel strengthens it greatly; however, doesn't do much in terms of preventing rust and corrosion, especially when exposed to moisture. Stainless steel is the addition of chromium to the metal. Chromium is inoxidizable, so provides excellent protection against rust and corrosion. Mercer is a company that's been around for decades, and they claim to stand behind their products. The benefit of this is customer service and warranty. If anything goes wrong, they're a phone call or an email away. So far, I've not been able to find any fault with these snips. I have been using them for a few weeks now, and am happing with its performance. The only notable I'd like to point out is that the product description states that these snips are also good for shellfish and small game birds. Shellfish is a bit ambiguous, and they're probably referring to things like shrimp rather than crab or lobster. Also, the video they provided is misleading in my opinion. In it, you do see them cut lobster, and it also shows that they blades can be separated easily, but those are different shears in the video and not these snips. To me, that video is not relevant to the product and misleading. Personally, I will only be using these snips for my herbs, but felt that I should point this out as an FYI.

Useful for Aerogardens. Small.
Any sharp scissors are adequate for harvesting and pruning in Aerogardens or similar tabletop hydroponic gardens but sometimes it's nice to have a compact set of shears to get into tight spaces. These Mercer herb snips are a good length for most people looking to trim small plants. The blades are well-honed and the cut is uniform along the the entire length. I appreciate that the handles are ambidextrous though not, despite the product description above, "ideal" for left-handers as the blades are not correctly oriented for those of us in that ten percent. (There are very fewtrue left-handed scissors available.) These snips are overall smaller in comparison toFiskars Micro Shears . From the photos below (the Fiskars shears are orange-handled), you can see that the blades are shorter by about three-eighths inch (9.5mm) from the pivot to the tips and the handles narrower with overall more restricted openings. As a six feet two inch male who wears size Large gloves, I can fit the tips of my fingers and thumb in the handles but not insert them fully as with the Fiskars. Overall, I think these are well-made and functional snips for very light trimming purposes. Given the relatively small size of the handles I wouldn't care to use them for anything other than small plants.

Very comfortable, Perfect for trimming herms
These herb snippers are great for collecting herbs and also cutting buds off basil and other plants. The small narrow blade allows you to be very precise in your cutting, while the large open loop scissor handles allows for excellent control especially for those with large hands that often have difficulty with small scissors (like me.) I didn't realize how much of a difference a pair of scissors specialized for herb cutting could make but it is tremendous. Every aspect of these scissors improve the ease / precision/ comfort of herb cutting. Comfort: These scissors are extremely comfortable to use thanks to the wide generous handle loops and the sharp, easy to use scissor blades. Build Quality: These are very well made and meet my expectations for a quality pair of scissors you would find in a $200+ knife set. The handles are high quality plastic/polymer and the scissor blades are high quality steel and very sharp. Final thoughts: These scissors work very well and I highly recommend them.

Great scissors for herbs and many other things
We have a garden of Italian herbs and have usually just used bigger scissors to snip the amount we needed. However, regular scissors often destroyed the stems or main part of the plant. These are small enough to get into the plants, and snip it properly. These are nice and sharp and very easy to hold. We've even used these to cut the stems from strawberries to keep them intact for cake decorating. Just be sure to wash after each use and wipe dry to prevent any debris from sticking to the scissors.

Very similar to my Joyce Chen kitchen scissors, but the handles are smaller
I have long loved my Joyce Chen kitchen scissors, but the blades have developed gouges and there's no way to take them apart to properly sharpen them. These Mercer scissors are almost exactly the same, but with smaller handles. I do wish the handles were bigger, as I cannot hold them the way I like. I can only fit three fingers comfortably inside. Pretty good though.

A very good set of kitchen snips
Mercer Culinary Herb Snips, 6 1/2-Inch These are a very nice quality level pair of herb scissors. They feel good in the hand and you can use them a long time before any hint of trouble sets in. My roommate uses them all the time for salad prep and the like. I don’t have a garden so I can’t speak to that type of use. The steel is of a high quality and the construction is top notch. They are comfortable to use and well built I don’t know what more you could want. They are great and get a high recommendation.
